Vegan Pumpkin Muffins

People don’t often think of pumpkins for their nutritional value. Low in calories to boot- this vegetable contains vitamins and antioxidants such as lutein, xanthin and carotenes. Here are some other healthy facts about pumpkins:

  • 100 g provides just 26 calories and contains no saturated fats or cholesterol
  • they are one of the food items recommended by dieticians in cholesterol controlling and weight loss programs
  • with 7384 mg per 100 g, it is has one of the highest levels of vitamin A- providing about 246% of RDA
  • they are a good source of B-complex group of vitamins like folates, niacin, vitamin B-6, thiamin and pantothenic acid
  • they are a great source of minerals like copper, calcium, potassium and phosphorus

So why not give this pumpkin recipe a try?

Vegan Pumpkin Muffins

Ingredients

1 1/2 cups blended cooked pumpkin
1/2 cup applesauce
1/2 cup agave
1/3 cup coconut oil
1/4 cup almond milk
1 tsp. vanilla extract
1 tsp. cinnamon
1/2 tsp. powdered cloves
1 cup whole wheat flour
1 cup brown rice flour
1 tbsp. baking powder
1/2 tsp. baking soda
1/2 cup chopped walnuts or other nut of choice
1/4-1/2 cup dried cranberries or raisins
sucanat

Instructions

Preheat oven to 325. While the oven is preheating, prepare muffin tray and mix the batter following these steps:

Cream together the first 7 ingredients. Then sift the next 4 ingredients on top of the creamed pumpkin ingredients in the order listed above. Quickly mix together thoroughly. Fill the muffin cups almost to the top of cup and sprinkle with sucanat. Bake at 325 for 20 – 25 minutes. Test to see if done by using a toothpick. The toothpick inserted into the center of the muffin should come out clean.

Makes 2 dozen muffins.
