Asian Quinoa

What is quinoa? While quinoa is usually considered to be a whole grain, it is actually a seed.  However, it is similar to a whole grain in that it can be prepared like rice or barley.  Quinoa is a convenient meal option as it takes less time to cook than other whole grains- usually about 15 minutes or less.  It is also tasty on its own or flavored easily with a splash of olive oil, salt and maybe a touch of lemon juice.  Quinoa has a very high protein content- which makes it a perfect dietary supplement for vegetarians and vegans alike.  It is also gluten-free and cholesterol-free.

Benefits of Quinoa:

1. Protein, protein, protein!  Quinoa contains nine essential amino acids.

2. Fiber! Quinoa has almost two times the amount of fiber as other grains.  Fiber lowers cholesterol, aids in heart disease prevention and reduces high blood pressure.

3. Iron! A much needed component for our bodies, iron helps keep red blood cells healthy, which in turn carry oxygen to muscles and the brain.  Iron also helps to regulate body temperature and energy metabolism.

4. Magnesium! This mineral helps keep blood vessels in tip top shape, which can  help sufferers of migraines.   Magnesium also helps promote blood sugar control, which can assist persons with Type II diabetes.  Magnesium also helps form healthy bones and teeth.

5. Vitamin B!  Quinoa is high in Vitamin B2, which improves brain and muscle cells energy metabolism.

Ingredients:

1 cup quinoa

2 cups water

1 cup or more of kale ripped into small pieces

¼ cup olive oil

¼ cup nori (seaweed) cut into small pieces

2 small cucumbers diced

1 avocado cubed

1 tbsp black sesame seeds

Juice from ½ lemon

½ tsp garlic salt

½ tsp salt

Instructions:

Place quinoa and water in a small pot and bring to a boil. Reduce heat and cover for 20minutes. Let cool.

Place the quinoa in a large bowl. Add kale, olive oil, nori, cucumbers, avocado, black sesame seeds, and lemon, garlic salt and salt.

Toss and serve!
