Lemon Bars

Lemon bars are truly delicious and very good for you. These lemon treats are vegan, light and will please one’s tastebuds!

Lemons are rich in Vitamin C which helps to neutralize free radicals linked to aging and most types of disease. The lemon peel contains tangeretin, a phytonutrient which has been proven to be effective for brain disorders like Parkinson’s disease. The practice of Ayurveda medicine values the lemon’s medicinal properties. While lemons are sour, they are actually warm, thereby promoting gastric fire, light and better vision. Lastly, when there is insufficient oxygen and one has difficulty in breathing (such as when mountain climbing) lemons are very helpful.

Lemon Bars

Ingredients:

  • 1 cup almonds
  • 1 cup soft dates
  • 1 vanilla bean or 1 tbsp vanilla extract
  • zest from one organic lemon
  • 2 tbsp lemon juice (ideally from the lemon above)
  • 1 cup dried coconut
  • ½ tsp sea salt

Instructions:

Place almonds in a food processor and process into a fine powder. Add dates, vanilla, lemon juice and lemon zest to the processor. Process again until well mixed. Set aside. In a large mixing bowl mix your coconut and salt. Place this mixture into your food processor and blend until well mixed. Transfer mixture into a glass brownie pan (8×8) and press down. Refrigerate for about one hour.

To finish- simply serve and enjoy!
