Summer Zucchini Salad

Zucchinis are healthy, nutritional and festive! Zucchinis have many advantages and offer a wide range of health benefits. Check out these factors:

  • One cup of zucchini only has 36 calories and can provide 10% of the recommended daily allowance of fiber
  • Zucchini helps lower cholesterol
  • Zucchini has high levels of vitamins A and C
  • Promotes prostrate health
  • Zucchinis do not contain saturated fats
  • Zucchinis are rich in antioxidants
  • Zucchinis provide an excellent source of folate
  • Zucchinis are a great place to find potassium
  • Zucchinis are rich in B vitamins

Ingredients:

2 zucchini squash (room temperature)

1 fresh heirloom tomato

½ cup fresh basil

2 tablespoons extra virgin olive oil

Sea salt to taste

2 tablespoons Cashew Parmesan cheese (see instructions for Cashew Parmesan Cheese below)

Instructions:

To make Cashew Parmesan Cheese, use the following ingredients:

1 cup raw cashews

½ garlic clove

½ tsp. sea salt

Place all three ingredients into a high-speed blender. Pulse until mixture looks like Parmesan cheese. Store in the refrigerator.

To make the Zucchini Summer Salad:

Pass zucchini through spiral slicer. Place into a large bowl. Cut the tomato into small pieces. Toss into the zucchini noodles. Slice the basil into thin strips. Add olive oil, salt, Cashew Parmesan cheese and top with basil.
